The best lamb loin chops you'll ever have

If you've been searching for that signature dinner party dish that will WOW your guests, look no further. These lamb loin chops will be the best you've ever tasted, and they're easy-peasy to make! It is my go-to recipe for hosting guests and it never fails to impress no matter how you plate it.

Herb and Garlic Roasted Lamb Loin Chops
Serves 4

4 lamb loin chops
2 T extra virgin olive oil
1/2 T fresh (or dried) thyme, chopped
1/2 T fresh (or dried) basil, chopped 
1 t fresh (or dried) rosemary, chopped 
Dash of paprika
2 cloves garlic, minced
zest of 1 lemon
1/2 t kosher salt
1/4 t black pepper 

Combine olive oil, thyme, basil, rosemary, garlic, lemon zest, salt and pepper in a bowl. Dip lamb chops into mixture to coat evenly. Cover chops and refrigerate for at least 30 minutes. Before cooking, take out of fridge and let come to room temp (about 30-60 minutes).  

Preheat oven to 400°F. Heat 1 tablespoon olive oil in heavy large ovenproof skillet over High heat. Add chops; cook until browned, about 3 minutes per side. Don't worry about the oil splatter, it'll be all over soon, and it is so worth it! 

Transfer to oven and roast lamb chops to desired doneness, about 10 minutes for medium-rare. Transfer lamb to platter, cover, and let rest 5 minutes. Enjoy with a glass of Shiraz.
