Breakfast stir-fry

Some mornings I want something extra hearty and filling (translation: meat and potatoes!!!). But, since we never keep breakfast meats like bacon or sausage on hand, I satisfy this craving with a quick "stir-fry" of leftover white rice with sliced mortadella (from the deli counter) and shredded cheese added at the end.

It reminds me of a Filipino breakfast our friends once made for us growing up. Season lightly with kosher salt and cracked black pepper and hot sauce, if you like. Top with a fried egg and it's breakfast in a pinch.
