I've found that I cook way more frequently now than I used to. I know, this sounds crazy, because life is certainly busier with a baby now than ever before. I think my newfound desire to cook stems from feeling hungrier (due to nursing), a want for variety, and also because it gives me a reprieve from baby care. The only difference now is that I've learned to whip up uncomplicated, complete dinners focusing primarily on fresh ingredients and ease of technique, all in under 30 minutes.
On an average week, I will usually make two main meat or fish dishes that we eat on alternating nights (I also mix it up for my lunches). And about three times a week, I like to make a new starch and veggie side so that it doesn't feel like we're eating a meal entirely made up of leftovers. It takes virtually no effort to rough-chop veggies or baby potatoes, throw onto a sheet pan and roast in evoo. I am usually able to do all the prep work and cooking while The Fella is on baby duty and giving Max his last feed before bedtime. Dinner is ready to eat by the time he's finished! My slow cooker, rice cooker and sheet pan have gotten a lot of use!
Saturday dinner was roasted cauli, Polish sausage, cherry tomatoes, tossed with lemony parmesan orzo. Easy-peasy!
