Creamy, sun-dried tomato pasta

I can honestly say that there's nothing better than a warm bowl of home-cooked pasta on a rainy evening. I was bored with all the leftovers in my fridge, so I whipped up an incredibly simple dish, no recipe involved.

I had the idea that I would make a comforting pasta in a heavy cream sauce. This idea was quickly embellished with four cloves of chopped garlic and a large handful of sun-dried tomatoes in oil, also chopped. Heat a small pot with a few turns of olive oil, add a dash of red pepper flakes, toss in the garlic and tomatoes. Add heavy cream – or, if you're like me and you discover that your cream has long expired – go find other substitutes!

I uncovered a lovely bit of creme fraiche relegated to the back of the fridge, leftover from our Russian Fête last week, improvised with a few splashes of milk to make the sauce richer, followed by a bit of chicken broth. Toss cooked whole wheat spaghetti in the bubbling sauce. Voila!

Easy-peasy, people.

The result was a fairly healthy dish, packed with sun-ripened bursts of flavorful goodness!
