It's a fantastic make-ahead freezer meal that I threw together two weekends ago, and it came in handy tonight because we were out of leftovers, tired, and scratching our heads about what to do for food.
Here's my recipe, adapted from Real Simple magazine (click through for the original recipe):
Ingredients
2 red bell peppers, chopped into 1-inch chunks
1 bunch scallions, chopped
A few garlic cloves, chopped finely
2 lbs large shrimp, raw with shells intact
Extra virgin olive oil
Kosher salt and pepper
Fresh basil, torn
6-8 ounces feta
1-quart resealable plastic freezer bags
Freeze it
Combine all ingredients, except feta, in a bowl and gently toss. Divide the mixture among 2 resealable plastic freezer bags, top with crumbled feta, and freeze, for up to 3 months, until ready to cook. If the mixture has frozen into a large, solid mass – as mine did – it might help to defrost it overnight in the fridge so that you can spread it in a layer to cook.
Cook it
Heat oven to 400 degrees. Remove the shrimp mixture from the bags, and place on a large baking sheet pan or casserole dish. Bake about 15 minutes, or until shrimp are cooked through.
Voila!
The only thing left to do now is kick back and watch some TV. Easy-peasy!
