Last night of Hanukkah + latkes!

In honor of the eighth and final night of Hanukkah, we celebrated with little latkes last night. I know, I know, this should have been done perhaps on the first night, but well, we can barely make it to regularly light the candles let alone slave over latkes! Better late than never, is my motto for most everything. This has to suffice. Needless to say, these are mixed straight out of a respected brand of instant potato pancake mix from Whole Paycheck. For only 30 minutes of effort in the kitchen, the flavor and consistency almost rivals the homemade kind, dare I say...
